Enjoy this cucumber salad as a refreshing side dish to your favorite summer meals! This recipe was adapted from Simply Recipes.

  1. Slice 1 1/2 pounds cucumbers lengthwise. Scoop out the seeds with a small spoon. Slice the cucumbers again lengthwise and then cut crosswise into 1/4-inch to 1/3-inch cuts.
  2. Toss the seeded, diced cucumbers in a colander with 1 Tbsp of salt.
  3. In a large bowl mix 3 Tbsp Soom Tahini, 1 Tbsp lemon juice, and 2 Tbsp warm water until combined. Stir in the 1/2 clove minced garlic, zest of a lemon and 1/3 cup chopped red onion.
  4. Briefly rinse the cucumbers under cool water and pat them dry with paper towels in the colander. Add the cucumbers to the bowl with the dressing and gently toss to combine well. Add 2 Tbsp chopped mint2 Tbsp chopped basil2 Tbsp chopped parsley, and salt and black pepper to taste. Serve cool.
