  1. Preheat oven to 400F.
  2. Place 1 lb of carrots in an oven-safe dish and toss with 1 tbsp oil, 1 clove of minced garlic, salt to taste, and freshly cracked pepper. Add water to dish and cover with aluminum foil. Bake for 30 mins.
  3. Uncover and bake another 25-30 mins until caramelized and cooked through.
  4. While the carrots are baking make the tahini glaze. Combine 1-1/2 Tbsp Soom Tahini, 1 tbsp water1-1/2 tsp maple syrup½ tsp lemon juice (or more, to taste), pinch of sea salt and black pepper.
  5. Transfer to serving dish and drizzle with tahini glaze. Garnish with sesame seeds and freshly chopped parsley or carrots tops.
