- Preheat oven to 400F.
- Place 1 lb of carrots in an oven-safe dish and toss with 1 tbsp oil, 1 clove of minced garlic, salt to taste, and freshly cracked pepper. Add water to dish and cover with aluminum foil. Bake for 30 mins.
- Uncover and bake another 25-30 mins until caramelized and cooked through.
- While the carrots are baking make the tahini glaze. Combine 1-1/2 Tbsp Soom Tahini, 1 tbsp water, 1-1/2 tsp maple syrup, ½ tsp lemon juice (or more, to taste), pinch of sea salt and black pepper.
- Transfer to serving dish and drizzle with tahini glaze. Garnish with sesame seeds and freshly chopped parsley or carrots tops.
