This fresh Tahini-Lemon dressing will liven up your diets this year!

  1. De-stem 1 bunch of kale and chop the kale into bite-sized pieces.
  2. In a blender or food processor, combine 2 juiced lemons2 tbsp Soom Tahini1 tsp sugar or 1 tsp honey1 tsp garlic powder or 1 chopped garlic clove1 tbsp white vinegar, dash salt & pepper, and blend until evenly mixed.
  3. Drizzle over the kale. Here is the important step: with clean hands, massage the kale leaves until they turn bright green and soften (about 2 minutes).
  4. Toss with 1/2 cup grated parmesan cheese, 1/2 cup slivered almonds and 1/2 cup cooked quinoa.
