For a rich, dense, and orange-infused tahini cake, this recipe is divine. Hitting sweet and fruity notes, this cake will impress guests.

 

Ingredients:

For the cake

  • Butter or oil for coating pan
  • 1½ cups flour
  • 1¼ cup sugar
  • 1 tsp baking powder
  • ¾ tsp baking soda
  • 1/4 tsp salt 
  • 4 eggs; divide egg yolks and egg whites
  • 1 cup minus 2 tbsp full fat plain Greek yogurt
  • ½ cup minus
  • 2 tbsp extra light olive oil
  • ¼ cup Soom Tahini
  • 1/4 cup orange juice
  • 1 tbsp orange liqueur
  • 3/4 tsp orange extract
  • grated orange peel from 2 oranges

For the cake

  1. Preheat oven to 350F. Generously butter a 9×9 round cake pan.
  2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl and stir until well-blended.
  3. In a separate bowl, beat egg whites with a hand mixer until the whites form stiff peaks.
  4. In a third bowl, mix together the egg yolks, Greek yogurt, olive oil, tahini, orange juice, orange liqueur, orange extract, and grated orange peel until well-blended.
  5. Add the wet ingredients to the dry ingredients and fold in the beaten egg whites with a spatula.
  6. Pour the batter in the buttered cake pan.
  7. Bake until golden and a toothpick comes out clean when inserted into the middle of the cake, about 32-35 minutes.
  8. Cool the cake on a rack for 15 minutes; then carefully turn over onto a plate and remove from pan.

For the glaze

  1. Place sliced oranges and sugar in a heavy saucepan. Cook over medium heat until the sugar melts and the mixture turns a light brown; stirring constantly.
  2. Remove the pan from the heat and immediately add water to blend into a thin syrup.
  3. Using a colander or strainer, strain the syrup into a bowl and mix with chocolate sweet tahini.
  4. Decorate the cake with fresh or candied orange slices.
