Nothing screams summer quite like sweet, juicy, and refreshing watermelon! This quick and light salad is the perfect meal for a summer afternoon. This recipe was adapted from Pancake Warriors.

For the Salad

  • 2 bags arugula
  • 2 cups watermelon chunks
  • 2-3 tbsp feta cheese crumbles
  • 2-3 tbsp chopped walnuts

For the Balsamic Tahini Dressing

  • 3 tbsp Soom tahini
  • 3 tbsp balsamic vinegar
  • 2 tbsp water
  • ½ tsp garlic powder
  • ½ tsp salt
  1. Place the arugula, watermelon, crumbled feta and chopped walnuts in a large salad bowl.
  2. Make the dressing by combining all the ingredients and stirring. Finish the dressing with a quick shake.
  3. Pour over the salad and enjoy!
