Nothing screams summer quite like sweet, juicy, and refreshing watermelon! This quick and light salad is the perfect meal for a summer afternoon. This recipe was adapted from Pancake Warriors.
For the Salad
- 2 bags arugula
- 2 cups watermelon chunks
- 2-3 tbsp feta cheese crumbles
- 2-3 tbsp chopped walnuts
For the Balsamic Tahini Dressing
- 3 tbsp Soom tahini
- 3 tbsp balsamic vinegar
- 2 tbsp water
- ½ tsp garlic powder
- ½ tsp salt
- Place the arugula, watermelon, crumbled feta and chopped walnuts in a large salad bowl.
- Make the dressing by combining all the ingredients and stirring. Finish the dressing with a quick shake.
- Pour over the salad and enjoy!
