These crispy oven-baked sweet potato fries are served with a bright, herbaceous green tahini dip. Make this dish for the perfect dinner side, appetizer, or game-day snack. Use whichever herbs you have handy, or your favorite herbs for a tasty dip or sauce.
- Preheat oven to 425F and line a rimmed baking sheet with parchment paper. Cut 2 medium sweet potatoes into 1/4”-1/2” thick fries.
- Add sweet potato fries to the sheet and toss with 1 1/2 tsp olive oil and 1/4 tsp pepper until coated. Arrange in an even layer and bake for 15-20 minutes, then flip, and bake for an additional 10 minutes or until golden brown and crispy. While the fries are hot, sprinkle with 1/2 tsp salt.
- While the fries are baking, make the green tahini sauce. Add 1/2 cup Soom Tahini, juice from 1 lemon, 1/2 cup fresh cilantro, 1/4 cup fresh parsley, 1/4 cup fresh mint*, 1 clove garlic, 1/4 tsp salt, 1/4 tsp pepper, and 1/4 cup ice cold water to the food processor. Blend until smooth and creamy, adding additional ice cold water as needed, until desired consistency is reached.
- Serve the sweet potato fries with green tahini sauce for dipping.
*Feel free to swap mint for 2 tbsp – 4 tbsp dill or 2 tbsp chives or add in your favorite herbs for an herbaceous, bright green tahini dip.
