These crispy oven-baked sweet potato fries are served with a bright, herbaceous green tahini dip. Make this dish for the perfect dinner side, appetizer, or game-day snack. Use whichever herbs you have handy, or your favorite herbs for a tasty dip or sauce.

  1. Preheat oven to 425F and line a rimmed baking sheet with parchment paper. Cut 2 medium sweet potatoes into 1/4”-1/2” thick fries. 
  2. Add sweet potato fries to the sheet and toss with 1 1/2 tsp olive oil and 1/4 tsp pepper until coated. Arrange in an even layer and bake for 15-20 minutes, then flip, and bake for an additional 10 minutes or until golden brown and crispy. While the fries are hot, sprinkle with 1/2 tsp salt.
  3. While the fries are baking, make the green tahini sauce. Add 1/2 cup Soom Tahini, juice from 1 lemon, 1/2 cup fresh cilantro, 1/4 cup fresh parsley, 1/4 cup fresh mint*, 1 clove garlic, 1/4 tsp salt, 1/4 tsp pepper, and 1/4 cup ice cold water to the food processor. Blend until smooth and creamy, adding additional ice cold water as needed, until desired consistency is reached.
  4. Serve the sweet potato fries with green tahini sauce for dipping.

*Feel free to swap mint for 2 tbsp – 4 tbsp dill or 2 tbsp chives or add in your favorite herbs for an herbaceous, bright green tahini dip.
